The team behind Born in Brunswick are no strangers to fame – it’s run by former MasterChef contestant Con Vailas and his mate Ben Kokma. A few years ago, Vailas lived in Melbourne and was inspired by the strong brunch scene in the hip suburb of Brunswick. It was there that the seeds were planted to open his own restaurant – an idea that was literally born in Brunswick. The Tasmanian-born Vailas soon returned home where his dreams of opening a cafe quickly came to life.
The team at Born in Brunswick have designed a space that feels sleek and inviting all at once. The giant mural of a macaw parrot, that surrounds the front door, is the first hint that something special awaits inside. Stepping through you’ll find a large light-filled space with huge pendant lights hanging from the roof. The laid back Scandi-style furnishings are broken up with a forest of plants along the walls, ultimately creating a stand-out vibe for when you need to grab a bite to eat.
The menu is what you would expect from a place that looks this sheike. Born in Brunswick offers a mix of flavours which means you can be safely satisfied any time of day. Highlights include a cinnamon spiced hotcake with citrus meringue and crumble ($24), smoked chicken and curried egg on a sourdough ($25) and wallaby ham, potatoes, kunzea and meyer lemon butter ($25). Like all great cafes, there’s a solid range of vegetarian and gluten free options available too.
